Ingredients
  1. Half Kg Mince (Whichever meat you prefer Beef or Mutton)
  2. 2 Onions
  3. 1 Potato
  4. 1 Carrot
  5. Half a Capsicum (optional)
  6. 5-6 Cloves Garlic
  7. 1/2 Tsp Turmeric
  8. 1 Egg
  9. Half inch Ginger
  10. 6 French Beans
  11. 100gms Peas
  12. 2 Green Chilies
  13. Coriander Leaves
  14. 1 Tsp Garam Masala Powder (In the recipe we have added the spices and ground them as we din't have Garam Masala ready)
  15. Sour lime or Vinegar
  16. Rawa
  17. ½ cup bread crumbs
Instructions
  1. Mix the meat, onion, chillies, cloves, garlic, ginger, salt and pepper with 1 cup of water.
  2. Put in a pan on moderate heat and stir cook till all the water has been absorbed and the meat is dry.
  3. Grind meat fine in a blender. Soak the bread in water for 5 minutes. Squeeze dry and add to the meat along with 1 egg, lightly beaten.
  4. Form the meat into cocktail-type sausage shapes. Beat the remaining egg and dip each croquette into the beaten egg, then into the breadcrumbs.
  5. Heat the oil in a frying pan on a moderate flame and fry the croquettes to a golden brown color. Cool. You should get about 30 croquettes.

Ingredients
  1. 1 kg beef(cut into cubes)
  2. 2 onions
  3. 2 tomatoes
  4. 10 curry patta leaves
  5. 2 green chillies deseeded
  6. 1 small bowl tamarind juice
  7. ½ coconut (grated)
  8. 3 inches ginger
  9. 1 pod garlic full
  10. 5 kashmiri chillies
  11. 1 tsp turmeric powder(haldi powder)
  12. 1 tbsp corrainder powder(dhaniya powder)
  13. ½ tsp cumin powder(jeera)
  14. 10 cloves(long)
  15. 3 pieces cinnamon (dal-chini)
  16. 1 tbsp kus kus(poppy seeds)
  17. 1 small bunch corrainder leaves
Instructions
  1. 1.Grind to a paste the coconut, ginger, garlic, Kashmiri chillies, turmeric powder, corrainder powder, jeera, cloves, cinnamon, kus kus and keep aside.
  2. 2.Heat oil in vessel and fry onions till translucent. Add tomatoes, salt and curry patta and green chillies as per taste). Now add beef with 1 cup of water until half boiled.
  3. 3.In another pan heat oil and fry the above paste for 3-4 mins or till oil seperates, add the boiled meat and after sometime the tamarind juice until done. Garnish the coriander leaves.

  1. ½ kg beef
  2. 6-8 kashmiri chillies
  3. Knock of seeds of 2-3 chillies
  4. 2 onions
  5. ½ coconut
  6. 4 garlic flakes
  7. 1 big tomato
  8. 1 tsp cumin seeds
  9. Salt to taste
  10. ½ tsp turmeric powder
  11. 1 tsp vinegar
  12. Potatoes
  13. 2 tsp poppy seeds(kus kus)
  14. 5-6 pepper corns
  15. 2 tsp oil
  16. ¼ tsp
Instructions
  1. 1. All the above ingredients have to be roasted accept the garlic ginger paste with two tea spoons of oil, then grind the roasted masala’s with garlic and ginger. Grind into a fine paste and keep aside.
  2. 2. Wash clean and dice the meet into small cubes. Put it to a boil along with 2 onions, 1 big tomato, ¼ inch jullians ginger, add to taste.
  3. 3. When the meat is cooked 3/4, add the masala and give the oil curry a boil, add water to the curry as per your thickness. Now add vinegar ½ boiled potatoes.

Xacuti (pronounced “Sha-kuti”) is a very essential Goan curry. It is a rich delicious blend of local spices and fresh coconut. Its a unique dish that consists of Poppy seeds and Kashmiri Chillies. The pronunciation “Shakuti” is most probably derived from the word “Chacuti” which is Portuguese, although the Portuguese Chacuti is brownish in colour as compared to the red Goan Xacuti.

For the stew
  1. 3/4 kg beef/mutton pieces - medium size with some bones
  2. 1 medium onion - chopped
  3. 2 dry red chillies
  4. 3 cardamoms
  5. One 1 inch stick of cinnamon
  6. 1 bay leaf
  7. 1 tsp garlic ginger paste
  8. 2 ripe tomatoes, chopped
  9. 1/2 tsp turmeric powder
  10. cooking oil
  11. salt to taste
For the masala
  1. 1 medium onion - chopped
  2. 4 tbsp grated coconut
  3. One 1 inch stick of cinnamon
  4. 3 cardamoms
  5. 4 cloves
  6. 3 dry red chillies
  7. 1 tsp cumin
  8. 1/2 tsp of peppercorns
  9. 2 tbsp coriander seeds
  10. 4-6 cloves of garlic
  11. Optional spices: 2 tbsp poppy seeds (khus khus), 1/2 tsp ajwain, 1tsp fennel/saunf seeds, 2 black star-spice
For the gravy
  1. 1 medium onion, chopped
  2. 1 large potato, cut into medium size cubes, forked on each side
  3. 1/4 cup tomato paste
  4. 1 tbsp of tamarind pulp or vinegar
  5. 1/4 tsp grated nutmeg - optional
  6. cooking oil
  7. Salt to taste
For the stew
  1. 1. Heat 2 tbsp oil in a pressure cooker or thick-bottomed pan and fry the onions till brown.
  2. 2. Add the whole spices & fry well.
  3. 3. Add the turmeric, salt & tomatoes, fry well.
  4. 4. Add the washed meat & fry well till it evenly changes colour from pink to brown.
  5. 5. Add water enough to just cover the meat layer & cook till the meat is tender (1 whistle on high & 40 mins simmer if in a pressure cooker).
For the masala
  1. 1. Heat a pan & dry-roast the chopped onion to light brown.
  2. 2. Add the coconut & fry till evenly brown, stirring well. Transfer this to the mixer/grinder.
  3. 3. Then, dry roast all the other 'masala' spices on medium heat, mixing well, till a nice aroma is given out. You can add a few drops of oil if needed.
  4. 4. Add this to the grinder & grind well, with some water to a smooth paste.
For the gravy
  1. 1. Heat 2 tbsp oil in a thick-bottom non-stick vessel & fry onion till brown.
  2. 2. Add the masala, 2 tbsp at a time and fry well each time.
  3. 3. Add the tomato paste & fry well for 2 minutes.
  4. 4. Add the potato cubes & some of the stew liquid. Cook covered, till potatoes are done.
  5. 5. Add the meat & remaining stew, along with some nutmeg, salt to taste & 2 tbsp vinegar or tamarind pulp. Add water if you need more fluid.
Notes
  1. Simmer for a few minutes & serve hot with boiled rice or pav.

  1. 1 kg Beef, cut into chunks
  2. 2 onions (sliced finely)
  3. 1-2 tomatoes chopped
  4. 2-3 red chillies (Kasmiri preferred)
  5. salt for seasoning
For the marination
  1. 3 red chillies
  2. 1 tsp cummin seeds
  3. 10 peppercorn seeds
  4. 10 flakes of garlic
  5. 1 inch ginger
  6. 1 stick of cinammon
  7. 1-2 cloves
  8. 1 tablespoon turmeric
  9. Pinch of sugar
  10. Grind all this into a fine paste with little vinegar or freshly squeezed lime juice.
Instructions
  1. 1) Pierce the meat with a fork, apply the marination and leave for 2-3 hours or even overnight.
  2. 2) In a deep pan fry red chillies & onions until translucent, add tomatoes.
  3. 3) Add the meat and fry well. Add water depending on the amount of gravy required.
  4. 4) Cook meat until tender.
  5. 5) Slice thinly. Serve with roast potatoes.
Notes
  1. Roast beef makes a good filling for sandwiches. Roast beef can be made dry into a chilly fry or served as gravy.

  1. 500g lean steak beef, cubed
  2. 2 medium potatoes, cubed
  3. 1 green chilli, finely chopped
  4. 1 large red onion, chopped
  5. 1 tbsp tomato puree
  6. 1 tbsp ginger/garlic paste
  7. 1 tsp turmeric powder
  8. 1 tsp chilli powder
  9. 1 tsp cumin powder
  10. 2 flakes of garlic, chopped
  11. 1/2 inch ginger, chopped
  12. 1 tbsp vinegar
  13. Salt & pepper
  14. Freshly chopped coriander for garnish
Instructions
  1. 1. Marinate the beef in ginger/garlic paste, turmeric, chilli powder , vinegar and season with salt & pepper.
  2. 2. In a saucepan, boil the beef in 1/2 cup water. Cook until beef is tender. Keep aside.
  3. 3. In the same saucepan, boil the potatoes in the same beef stock (water used to boil the beef)Cook until potatoes are tender. Drain and keep aside. Keep the stock.
  4. 4. In a pan, heat the oil, fry the chopped ginger, garlic and green chilli. Add the onions, sauté until onions are translucent.
  5. 5. Add the beef and mix well. Add a little stock.
  6. 6. Mix in the tomato puree and cumin powder. Season well . Cook for few minutes.
  7. 7. Garnish with chopped coriander. Serve hot.

Ingredients
  1. 1 tbsp. oil
  2. 500g diced lean beef
  3. 1 potato, cubed
  4. 3 onions, chopped
  5. 2 tomatoes, chopped
  6. 1 carrot, chopped into cubes
  7. 50 gms French beans
  8. 4 eggs, boiled and chopped
  9. ½ cup green peas
  10. 1 tbsp. ginger garlic paste
  11. 3-4 cloves
  12. 1 cinnamon stick
  13. 2 green chilli, chopped
  14. 1 whole dried red chilli
  15. 1 tsp. turmeric powder
  16. ½ tsp. pepper powder
  17. ¼ cup milk
  18. 2 tbsp. red wine vinegar
  19. 150g macaroni, boiled
Instructions
  1. 1. Heat oil in a saucepan, add the cinnamon, cloves, green chilli and ginger garlic paste. Add in the onions and sauté until onions are translucent. Add in the chopped tomatoes and stir in the turmeric and pepper powder.
  2. 2. Add in the beef and enough water to just cover the beef. Cook until meat is half done.
  3. 3. Add the chopped carrots, potatoes and vinegar. Stir and cook until potatoes are partly cooked.
  4. 4. Add in the peas, chopped eggs, macaroni and milk. Stir well till coated with the sauce. Cook for few more minutes. Season with salt and pepper.
Notes
  1. You can make this stew by adding chicken and pork, or just one variety of meat. For a goan twist add goan sausages.
