A delicious, simple chicken recipe cooked with spices.
Mom's Chicken Curry

Please note : Chicken – ½ kg (Cut into bite size pieces)
For Marinade
- - 2 tsp turmeric powder
- - 4 tsp red chilly powder(Adjust as per taste)
- - 1 tsp garam masala powder
- - 1 tsp soya sauce
- - 2 tsp ginger garlic paste
- - 2 tsp curd
- - 1 tsp lemon juice
- - 1 stig curry leaves
- - Salt as per taste
For Curry
- - 4 Onions(Finely chopped)
- - 3 tomatoes(Finely Chopped)
- - 1 tsp ginger garlic paste
- - 2 green chilly(Slit lengthwise)
- - 1 stig curry leaves
- - Oil for frying
To Grind
- - ½ cup grated coconut
- - 8 cashews(soaked in milk)
- - 1 tsp fennel seeds
For Tempering
- - 3 Cinnamon sticks
- - 2 Cloves
- - 2 tsp Fennel seeds
Method
- 1. Clean the Chicken well and add the Ingredients given for marinade and keep in the refrigerator for 1-3 hours.
- 2. Grind the coconuts with the Cashews, Fennel seeds into a fine paste and keep it aside.
- 3. Crush and powder the ingredients for tempering and keep aside.
- 4. Heat oil in kadai, add the powdered spices, sauté for a minute.
- 5. Add the onions, green chilli, curry leaves and sauté till transparent.
- 6. Add the ginger garlic paste and sauté. Now add the tomatoes and sauté for 5 minutes.
- 7. Add the marinated chicken with the marinade and sauté till the chicken turns white on the outer.
- 8. Add water just till the chicken pieces nicely immerse. Now taste and adjust chilli powder or salt if needed.
- 9. Cover and cook till the chickens are tender.
- 10. After the Chicken is well cooked, remove the cover and add the grounded coconut paste and leave to boil.
- 11. When the gravy nicely boils, simmer and cook till the curry consisitency(till the oil floats on top)
- 12. Finally garnish with Cilantro.
Tips
- Tastes excellent with steaming White rice.
